How To Make Dublin Coddle: A Traditional Irish stew

Dublin Coddle is a traditional Irish stew that's both hearty and comforting.

This is a popular meal, known as Dublin or Irish Coddle, served in a lot of traditional Irish pubs. It’s typically made with pork sausages, bacon, onions, and potatoes. The ingredients are layered in a pot and slowly cooked together, which allows the flavors to meld beautifully. Some recipes also include carrots or other root vegetables. Dublin Coddle: Ingredients

  • 8 slices of bacon
  • 8 pork sausages
  • 2 large carrots
  • 2 large onions
  • 4 or 5 large potatoes
  • Salt & pepper
  • Fresh parsley for garnish

Instructions for making Dublin Coddle

Prep time: 15 minutes.
Cooking time: 60 minutes
Serves: 4/5 people

Preparing:

  1. Wash and peel the potatoes, and chop them into cubes.
  2. Wash the carrots, peel the outer layer, and cut into chunks.
  3. Peel onions and chop into small chunks.
  4. Chop the pork sausages into chunks.
  5. Slice the bacon into cubes.
  6. Wash and finely chop the parsley.

Cooking:

  1. Place the bacon into a large pot.
  2. Put the sausages into the same pot followed by the carrots and onions.
  3. Put the potatoes on top of the meat and vegetables.
  4. Fill the pot with water, until it slightly covers the ingredients.
  5. Bring to the boil.
  6. Simmer for 45 minutes.
  7. Add Salt & pepper and the parsley.
