
Dublin Coddle is a traditional Irish stew that's both hearty and comforting.
This is a popular meal, known as Dublin or Irish Coddle, served in a lot of traditional Irish pubs. It’s typically made with pork sausages, bacon, onions, and potatoes. The ingredients are layered in a pot and slowly cooked together, which allows the flavors to meld beautifully. Some recipes also include carrots or other root vegetables. Dublin Coddle: Ingredients
- 8 slices of bacon
- 8 pork sausages
- 2 large carrots
- 2 large onions
- 4 or 5 large potatoes
- Salt & pepper
- Fresh parsley for garnish
Instructions for making Dublin Coddle
Prep time: 15 minutes.
Cooking time: 60 minutes
Serves: 4/5 people
Preparing:
- Wash and peel the potatoes, and chop them into cubes.
- Wash the carrots, peel the outer layer, and cut into chunks.
- Peel onions and chop into small chunks.
- Chop the pork sausages into chunks.
- Slice the bacon into cubes.
- Wash and finely chop the parsley.
Cooking:
- Place the bacon into a large pot.
- Put the sausages into the same pot followed by the carrots and onions.
- Put the potatoes on top of the meat and vegetables.
- Fill the pot with water, until it slightly covers the ingredients.
- Bring to the boil.
- Simmer for 45 minutes.
- Add Salt & pepper and the parsley.
